做(zuò )法:春笋切成片后(hòu )加少许盐捞出后用清水浸(jìn )泡,生姜切(qiē )片(piàn ),葱切成(chéng )段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱(cōng )段(duàn )翻(fān )炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖(gài )上锅盖焖。 -
