做(zuò )法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋(sǔn )、牛(niú )肉片、葱段(duàn )翻炒1分钟左右(yòu )。再加入生(shēng )抽、老(lǎo )抽、蚝(háo )油(yóu )翻炒均匀,加入少量清水半(bàn )掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
