做法:春笋切(qiē )成片后加(jiā )少许盐捞出(chū )后用清水浸泡,生姜切片,葱(cōng )切成(chéng )段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻(fān )炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀稍(shāo )收汁时盖(gài )上锅盖焖。
