做法:春笋切成片(piàn )后加少许(xǔ )盐捞(lāo )出(chū )后用(yòng )清水浸泡,生姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍(shāo )收(shōu )汁时盖上锅盖焖。
