做法:春(chūn )笋(sǔn )切成片后加(jiā )少许盐(yán )捞出后用清水浸(jìn )泡,生姜切片,葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半(bàn )掩住(zhù )春笋,盖(gài )上锅盖大(dà )火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍(shāo )收汁时(shí )盖上锅盖焖。
