做法:春笋(sǔn )切成片后加(jiā )少许盐捞出后(hòu )用清水浸泡(pào ),生姜切(qiē )片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少量清水半(bàn )掩住春笋(sǔn ),盖(gài )上锅盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬干的时候(hòu )加入(rù )盐,翻(fān )炒(chǎo )均(jun1 )匀稍收汁时盖上锅盖焖。
