做(zuò )法:洗净宰好鲫鱼,洗(xǐ )净淮山(shān )和薏米。用清水把陈皮泡软,拍裂一(yī )小块姜(jiāng ),热锅,用姜块在锅上擦一遍,放两勺油,待油六成热下(xià )鱼,煎(jiān )至微黄。煮(zhǔ )沸瓦(wǎ )煲里的清水,放(fàng )入煎煮好的(de )鲫鱼和其他材(cái )料,武火(huǒ )煮沸,转中(zhōng )小火煲一个半小(xiǎo )时(shí ),下盐调味即可品尝。
