做(zuò )法:洗净宰(zǎi )好鲫(jì )鱼,洗(xǐ )净(jìng )淮山和薏(yì )米。用清水把(bǎ )陈皮泡软,拍裂一小块姜,热锅(guō ),用(yòng )姜块在(zài )锅上擦一遍,放两勺油,待油六(liù )成热下(xià )鱼,煎(jiān )至微黄。煮沸瓦煲里的清(qīng )水,放入煎煮好的鲫鱼和其(qí )他(tā )材料,武火煮沸,转中小火煲一(yī )个半小时,下盐调味即可品尝。
