做法:洗(xǐ )净宰好鲫鱼,洗净淮(huái )山和薏米。用(yòng )清水(shuǐ )把陈皮泡软,拍裂一小块姜(jiāng ),热(rè )锅,用姜块在锅上(shàng )擦(cā )一遍,放(fàng )两勺油,待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水,放入煎煮好的鲫鱼和其他材(cái )料(liào ),武火(huǒ )煮沸(fèi ),转中小(xiǎo )火煲一个半小(xiǎo )时,下盐调味即可品尝。
