做法:春笋切成片后(hòu )加少许(xǔ )盐捞出(chū )后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均(jun1 )匀,加入少量清水半(bàn )掩住春笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
