做(zuò )法:春笋切(qiē )成片(piàn )后加少许盐捞出(chū )后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半(bàn )掩(yǎn )住春(chūn )笋,盖上锅盖大火煮开后(hòu )转中火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收(shōu )汁(zhī )时盖(gài )上锅盖焖(mèn )。
