做法:春笋切(qiē )成片后加(jiā )少许盐捞出后用清(qīng )水(shuǐ )浸泡(pào ),生姜切片,葱(cōng )切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水半掩(yǎn )住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅盖(gài )焖。
