做(zuò )法:春笋切成(chéng )片后加少(shǎo )许盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切片(piàn ),葱切成(chéng )段。锅烧热(rè ),倒(dǎo )入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快(kuài )熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖(gài )焖。
