做法(fǎ ):春笋切成片后加少(shǎo )许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干(gàn )的时候加入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖焖。
