做法:春笋切成片后加少许盐(yán )捞出后用清(qīng )水浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量(liàng )清水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒均(jun1 )匀稍收汁(zhī )时盖(gài )上锅(guō )盖焖。
