做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜(jiāng )切(qiē )片(piàn ),葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀(yún ),加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大(dà )火(huǒ )煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。
