做法:洗净宰好鲫(jì )鱼,洗(xǐ )净(jìng )淮(huái )山和薏米。用(yòng )清水把陈皮泡(pào )软,拍裂一小(xiǎo )块姜,热锅,用姜(jiāng )块在锅上擦一遍(biàn ),放两勺油(yóu ),待油六成热下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水,放入(rù )煎煮好的鲫鱼和其他材料(liào ),武火煮沸,转中小火煲一个半小(xiǎo )时,下盐(yán )调味即可品尝。
