做法:春(chūn )笋切成片后加少(shǎo )许(xǔ )盐捞(lāo )出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切(qiē )成(chéng )段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
