做(zuò )法(fǎ ):洗(xǐ )净宰好鲫(jì )鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软,拍裂(liè )一小块姜,热锅,用姜块在锅上擦一遍,放两勺(sháo )油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里(lǐ )的清水,放入煎煮好(hǎo )的鲫鱼和其(qí )他材料,武(wǔ )火煮沸,转(zhuǎn )中小(xiǎo )火(huǒ )煲一个半小时,下盐调(diào )味(wèi )即可品尝。 -
