做(zuò )法(fǎ ):洗净宰(zǎi )好鲫(jì )鱼,洗净淮山和薏(yì )米。用清(qīng )水把陈皮泡软,拍裂一小块姜,热锅,用姜块在锅(guō )上擦一遍(biàn ),放两勺(sháo )油,待油六成热下(xià )鱼,煎(jiān )至微黄。煮沸瓦煲(bāo )里的清水,放入煎煮(zhǔ )好的鲫(jì )鱼和其他(tā )材料,武火煮沸,转中小火煲一个半(bàn )小时,下盐调味即可品尝。 -
