做(zuò )法:春笋切成片后加少许盐捞出后用清(qīng )水浸(jìn )泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左右。再(zài )加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到(dào )水快熬(áo )干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
