做法(fǎ ):春笋(sǔn )切成片后加少许盐捞出后用清水浸泡(pào ),生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒(chǎo )1分(fèn )钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
