做法:春笋切成片后加少许(xǔ )盐(yán )捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放入(rù )生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入(rù )盐,翻炒均匀(yún )稍(shāo )收汁时盖上锅(guō )盖焖。
