做法:春笋切成片(piàn )后加少许盐捞出(chū )后用清(qīng )水浸泡,生姜切片,葱(cōng )切成(chéng )段。锅烧热,倒(dǎo )入2勺(sháo )油,放入(rù )生姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快(kuài )熬干的时候加入盐,翻炒均匀稍收汁(zhī )时(shí )盖(gài )上锅盖焖。
