做法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏米。用清水(shuǐ )把陈皮泡软,拍(pāi )裂一小块姜,热(rè )锅(guō ),用(yòng )姜块在锅(guō )上擦一遍,放两勺油,待油(yóu )六成热下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放(fàng )入煎煮好的鲫鱼和其他材料,武火煮(zhǔ )沸,转中(zhōng )小火煲一个半(bàn )小时,下盐(yán )调味(wèi )即可(kě )品尝。
