做法:春(chūn )笋切成片(piàn )后加少许盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺油(yóu ),放入生(shēng )姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水半掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬(áo )干的时候(hòu )加入盐,翻(fān )炒均(jun1 )匀(yún )稍收汁时盖上锅盖焖。
