做法:春笋切成(chéng )片后加少许盐捞(lāo )出后用清(qīng )水浸(jìn )泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再(zài )加入(rù )生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水(shuǐ )快(kuài )熬干的时候加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖。
