做法:春笋切成片后(hòu )加少(shǎo )许盐(yán )捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
