做(zuò )法:春笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸(jìn )泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅(guō )盖焖。
