做法:洗净(jìng )宰(zǎi )好鲫(jì )鱼,洗净(jìng )淮山和薏米。用清(qīng )水把陈皮泡软,拍(pāi )裂一小(xiǎo )块(kuài )姜(jiāng ),热锅(guō ),用姜块在锅上擦一遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮(zhǔ )好(hǎo )的鲫鱼和其他(tā )材料,武(wǔ )火煮沸,转中(zhōng )小火煲一个半小时,下盐调味(wèi )即可品尝。
