做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成(chéng )段(duàn )。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左(zuǒ )右。再(zài )加(jiā )入生(shēng )抽(chōu )、老抽、蚝油翻炒均(jun1 )匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
