做(zuò )法:洗(xǐ )净(jìng )宰好鲫鱼,洗净淮(huái )山和(hé )薏米。用清水(shuǐ )把陈皮泡软(ruǎn ),拍裂(liè )一小块姜,热锅,用姜块在锅上擦一遍(biàn ),放两勺油,待油六成热(rè )下鱼(yú ),煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小(xiǎo )火煲一个半(bàn )小(xiǎo )时(shí ),下盐调味即(jí )可品尝。 -
