做法:春笋(sǔn )切成片后(hòu )加(jiā )少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再(zài )加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春(chūn )笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水(shuǐ )快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖(gài )焖。
