做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅烧热(rè ),倒(dǎo )入2勺油(yóu ),放入生姜、春(chūn )笋、牛(niú )肉片、葱(cōng )段翻(fān )炒1分(fèn )钟左右。再加入生抽(chōu )、老抽(chōu )、蚝(háo )油翻炒均匀(yún ),加入少量清水(shuǐ )半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬(áo )干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
