做法:春笋切成片后加(jiā )少(shǎo )许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉片(piàn )、葱(cōng )段翻炒1分(fèn )钟左右(yòu )。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清(qīng )水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
