做法:春笋切成(chéng )片后加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜切片,葱(cōng )切成段。锅烧热,倒入(rù )2勺(sháo )油,放(fàng )入生姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半(bàn )掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候加(jiā )入(rù )盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅盖焖。
