做法:春笋切成片后加少许盐捞出后用(yòng )清(qīng )水浸泡,生姜切片,葱切(qiē )成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
