做法:春笋切成片后(hòu )加少许盐(yán )捞出后(hòu )用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放(fàng )入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖(gài )上锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快熬干的时(shí )候加入盐,翻(fān )炒(chǎo )均匀稍收汁时(shí )盖上锅盖焖(mèn )。
