做法:春笋(sǔn )切成片后(hòu )加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上锅(guō )盖大火煮开(kāi )后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅盖焖。
