做法:春笋(sǔn )切成片(piàn )后加少许盐(yán )捞出后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的(de )时(shí )候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖(mèn )。
