做法:春笋切(qiē )成片后加少许盐(yán )捞(lāo )出后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩(yǎn )住(zhù )春笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍(shāo )收(shōu )汁时盖上锅盖焖。
