做法:春笋(sǔn )切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒(chǎo )1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀(yún )稍(shāo )收(shōu )汁时(shí )盖上(shàng )锅盖焖。
