做法:春笋切成片后加少许(xǔ )盐捞出(chū )后(hòu )用清水浸泡,生姜切片,葱切成段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱(cōng )段翻(fān )炒1分钟(zhōng )左(zuǒ )右。再加入生(shēng )抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
