做法:春笋切成片后加少许盐捞出后用清(qīng )水浸(jìn )泡(pào ),生(shēng )姜(jiāng )切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒(chǎo )均匀(yún ),加入少量清水半(bàn )掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮到水快熬(áo )干的时候加入盐,翻炒(chǎo )均匀(yún )稍收(shōu )汁时盖上锅(guō )盖焖。
