做(zuò )法:春笋切(qiē )成片后加(jiā )少许盐捞出后(hòu )用清水浸泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放(fàng )入生(shēng )姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍(shāo )收(shōu )汁时盖上锅盖焖。
