做法:春笋切成片后加少许盐(yán )捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒(chǎo )1分(fèn )钟左右。再(zài )加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量(liàng )清(qīng )水(shuǐ )半(bàn )掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻(fān )炒均匀稍收(shōu )汁(zhī )时盖上锅盖焖(mèn )。
