做法:春笋切成片后加少许盐(yán )捞出后(hòu )用清水(shuǐ )浸泡,生姜切片,葱切(qiē )成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右(yòu )。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋(sǔn ),盖上(shàng )锅盖(gài )大火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖(gài )焖(mèn )。
