做法:洗净宰(zǎi )好(hǎo )鲫(jì )鱼,洗净淮山和薏(yì )米。用清水把陈皮(pí )泡软,拍裂一小块姜,热锅,用姜块在锅上擦一遍,放两勺油,待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的(de )清(qīng )水(shuǐ ),放(fàng )入煎煮(zhǔ )好的鲫(jì )鱼和其他材料,武火煮沸,转中小火煲(bāo )一个半小(xiǎo )时(shí ),下(xià )盐调味即可品(pǐn )尝。
