做法:春(chūn )笋切成片后加少许盐捞出(chū )后(hòu )用清(qīng )水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半(bàn )掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时候加(jiā )入盐(yán ),翻(fān )炒均(jun1 )匀稍收汁时盖上(shàng )锅盖(gài )焖。
