做法:春笋切成(chéng )片后加少许盐捞出后用清(qīng )水浸泡,生姜切(qiē )片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋(sǔn ),盖上(shàng )锅(guō )盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐,翻炒均(jun1 )匀(yún )稍收汁(zhī )时(shí )盖上锅盖焖。
